Cast iron pineapple upside down cake |
I had 2 projects today... that I just finished. One - was to make a cast iron pineapple upside down cake (a favorite type of cake for DH (and one I almost never make as I'm not fond of pineapple) and two - I needed to create 2 more ceramic stamps for the studio.
I think I've mentioned before that I've been trying these Cast Iron Cooking Magazine recipes. So far I've tried several... including Chicken Pot pie, Bacon wrapped sausages, Chicken Spaghetti, and a giant Snickerdoodle cookie.
DH saw this Pineapple upside down cake in the magazine and has been waiting for me to give it a go. Today I did. It came out pretty good... if you like pineapple. But I can actually eat around the pineapple. The little pie bird in the center is just there to make it look cuter.... and I sprinkled a little powdered sugar on it for effect.
And as for the ceramic stamps... this was our first project this past Saturday. We were told to make at least 3 stamps in either different sizes or different styles to use as our signature stamp. I made 3 in class and came home and made 2 more this morning. One is a signature stamp... the other is a chicken head stamp (surprise, surprise!).

These are just recently carved out of a hunk of clay... still have to dry, be cleaned, and fired before use.
That's my Sunday so far... how's yours?
Amaryllis bulb growing |
Oh, we got an Amaryllis bulb for Christmas and it's just starting to do it's thing! (Please excuse my dirty windows - it'll be spring before I get to them - pictures are not forgiving) I put it tentatively in the computer room window so it could get some sun - so far the cats haven't noticed it. Wish me luck with that.
Thanks for coming by. Wish I could serve you some coffee and pineapple upside down cake!
Brought up my amaryllis from the basement today. Pots everywhere. You missing header and ID have me a little confused.
ReplyDelete"Missing header and ID"?? Looks normal on this end....
DeleteMy amaryllis is just blooming now. I've only made pineapple upside down cake once and it was so pretty! Alas, daughter does not like pineapple, so I likely won't make it again, or often. Didn't do mine in a cast iron pan the way you did, though. -Jenn
ReplyDeleteYes, the cake is pretty... especially if you add the red cherries inside the pineapple circles (I never have cherries in the house). And I'm with your daughter about the pineapple.
DeleteAt Christmas in Wisconsin we made pineapple upsidedown cake in cast iron, using fresh pineapple. Yum yum.
ReplyDeleteI'm guessing that you can cook almost anything in cast iron... or so it seems.
Deletedon't look at my windows, especially the loss of seal for double pane which makes cleaning them nicely non existent, nice carving, I watched a cooking show the other day about cast iron pots made in Tennessee, might have to look into cooking in then more like you
ReplyDeleteCast Iron cooking seems to be the fad right now... at least around here. Other magazines besides Cast Iron Cooking and Southern Cast Iron Cooking are taking up the challenge. I think I saw a Taste of Home's Cast Iron Cooking Magazine the other day.
DeleteI had to laugh when I first saw that cake. At first I thought it was made of cast iron! :-)
ReplyDeleteMy bad. I should have said pineapple upside down cake in a cast iron skillet.
DeleteThe cake looks good and I'll be willing to bet that your husband doesn't mind not having to share the pineapple soaked in brown sugar and butter.
ReplyDeleteNo, he and his brother love pineapple. I can take it or leave it... but prefer to leave it. And you're right, he'd eat the whole cake by himself if he has the chance.
DeleteI love pineapple, I wish I could have a piece too. :-)
ReplyDeleteThe stamps are great, I'm sure they'll imprint beautifully when done.
My mom has an amaryllis that actually is in bloom. She sent me a pic yesterday; it's huge and gorgeous! Post a pic when yours does too!
Kim, I'll send you a virtual piece. Enjoy it with your coffee today.
DeleteMaking some more stamps today. I hope they imprint OK.
And yes, at the rate the amaryllis is growing, it should bloom soon (I think). I will post a pic when it does.
Love pineapple upside down cake. Now I may have to throw one together. Thanks. Every year I think I will get an amaryllis kit but still haven't done it. Maybe next year?
ReplyDeleteWe were given this amaryllis kit. We stay away from plants because of the cats, but couldn't just let it stay in the box. So far the cats haven't noticed.
DeleteMy grandson was here for a few days last week - my windows were covered in fingerprints. The outside aren't much better.
ReplyDeleteThe cake looks good, though I'm not a big fan of pineapple either, unless it is fresh. Then it's candy.
Have a great week!
Eileen
Our windows (at least in the kitchen) are generally covered with little raccoon paw prints (on the outside). The rest are just in a need of a good cleaning, but it will have to wait until the warm weather returns.
