My Monday...

Stuffed artichokes


Stuffed artichokes are a favorite of ours. I don't make them often, but when we do - we really enjoy them. My mother-in-law used to make them a lot and bring them or share them with all of us and we still consider them a special treat.

And I have a question for all of you out there... Do you find that some days things 'get to you' more than other days?  For some reason today has been just a jumble of little things that are annoying, none of them my fault, and yet, it seems to be my responsibility to fix them. Result is that I have to make phone calls to correct the mix-ups (which were none of my doing). In the end, it will all straighten out, but it's ruined my day in the process. It all burns down to someone down the line not doing their job... (or screwing up).

But before I close,  I wanted to mention that I've been going gluten-free for a few weeks now (maybe 6), and I think it's good for me. I have cheated on occasion without any major setbacks, but all in all, it seems to work well. I don't think I have an allergy to gluten, but possibly a sensitivity that acts up on occasion. Anyhow, I'm going to continue it. 

It isn't that difficult... especially  with the pandemic and staying home so much. There are products that I like (Canyon Bakehouse GF bagels and bread, Tate's Bake Shop GF chocolate chip cookies, Sheila G's Brownie Brittle, Good thins simply salt GF crackers, and Annie's GF rice pasta and cheddar cheese). Now there have been some products I tried and definitely didn't like, but these are good. If anyone has any other suggestions, I'd love to hear them.

  1. I have days like that, too. Everything annoys me, for no reason I can ascertain. I am not GF but occasionally entertain the idea to do it, just to see if there is any difference in the way I feel. But it's for sometime in the future. Somehow I missed your hummers and now have to backtrack in your posts looking for them. Patti got me interested. :-)

    1. Glad to know it's not just me. If you decide to try gluten-free, it's not that hard. But I would definitely check out for GF recommendations as some of the stuff isn't too good... kind of gritty.

  3. I meant to add that my mother in law used to make stuffed artichokes and they were always a special treat. It's been a long time. I should learn to make them myself!

  4. Amazing, today is my day and I was just feeling badly for yelling at Callie for throwing up in the living room. She had just come in and I thought she should have done it while she was outside eating grass. Bad Patti. I apologized but understand how some days just don't work.
    Good luck with the GF diet. Thought about it but never quite made it.

  5. Absolutely cannot stand wasting time fixing other people's mistakes. We are often quoted as saying, "Just do your job." Glad things are working out well for you with your gluten-free quest! -Jenn

    1. Thanks, Jenn. It just really irks me... and I'm sure not only me... when things aren't done as promised... and the mess is left for me to fix. Someone somewhere drops the ball and the rest of us down the line are screwed (sorry). Just frustrating.

  6. That photo of your stuffed artichokes looked so good Rian! When I'm at the grocery store tomorrow maybe I'll take a look in produce and see what I find.. It's interesting, your gluten free ambition... back in 2014 (the year I retired) several women in my office were doing the same. I remember the cookies and cupcakes they'd bring in (gluten free) seemed very dense. I think I need my gluten. :)

    1. Yes, GF products are not as light and airy as gluten products. So, if you have no problem with gluten, I wouldn't recommend trying it. But if you do have a problem, there are some products out there that are pretty good. As for me, I'm trying to determine exactly where I stand in this. It may take a while for me to figure out if gluten-free is helpful or not for me. (My stuffed artichokes were NOT GF as I used regular seasoned bread crumbs with the garlic, parmesan cheese, and olive oil to stuff them.)

  7. That shower curtain would have given me a turn for a split second. LOL.

    Absolutely things bother me more on some days than others. Actually, I find my mood is pretty up and down anyway (blame that on menopause, though I've been post-menopausal for a couple of years) and from being stuck at home for 15 months. And while it might seem silly to some, I do find my energy sometimes can be "off" around a full moon. I usually don't realize it until after the fact, though! Then I just "blame" everything on that. LOL.

    I'm glad your gluten-free diet is working well for you. I'm still struggling to find things that I can eat that don't cause issues, even with all the herbal antimicrobials I've been taking, along with the biofilm disruptors, via the naturopath. I WISH it was as easy as going gluten-free. LOL.

    1. I do think the moon affects us (in different ways)... just as it affects the tides. Why wouldn't it? The weather affects people. And since we are all different, I think things will always affect each of us differently... (with some more affected than others... and some seemingly not affected at all).
      And good luck with your struggle to find something that helps with your issues. If only things were simpler and somehow we could just google "what is wrong with me?" and get a straight forward answer.

  8. Oh there are definitely days when every little thing is an annoyance. I had one of "those" days just last week. I had to give myself a stern talking to and it helped, some. :p

    I've never eaten artichoke except in dip and it's good that way. If I ever get an opportunity to try it stuffed, I'll definitely give it a go.

    1. It's amazing how annoyed one can get... and I try to let it go, but sometimes it just won't go.
      Artichoke dip (usually spinach and artichoke)is good. And plain artichoke just steamed and leaves dipped in butter or ? is good too. But stuffed artichoke is the best! (IMO)

  9. awwww, some days are just like that. i have days where it's time to start dinner and i can't remember what i did all day. i know i was busy all day, but with what??? owning rental income property, my days are always fixing messes and resolving the problems other people make!!

    i love artichokes, would you share that recipe and "how" you actually eat it??

    1. Debbie, I would be glad to share... perhaps on the next post? As for the eating part, you simply pull off a leaf, scrape the stuffing (and the soft part of the heart that is at the bottom of the leaf) with your teeth. Then when all done, you remove the empty leaves in the center and enjoy the heart - which is delicious!

  10. Nothing worse, than to have to make phone calls, to straighten something out, especially someone else's mistake!!!

    So glad you have gone G/F and it is helping. I did years ago, and my quality of life is sooooooooo much better!

    Yes, there are winners and losers, in G/F foods. -smile-

    1. Hi! Thanks for coming by and commenting. Yes, I really dislike having to be on the phone all day trying to fix someone else's screw-up. It's done now... and everyone was very helpful, but still... (so many things I would have rather been doing).
      And I will continue the GF for a while. Think it is helping, but may take some time to be sure.

  11. Stuffed artichokes are one of my favorites. I don't have them often enough. They remind me of how my mother made them.
    My wife is on a gluten free diet because she has celiac. If she cheats, she is punished with diarrhea, sometimes nausea. I prefer the usual. But I have to admit gluten free foods have come a long way in flavor.

    1. I know, John... stuffed artichokes are great! And I'm sorry to hear that your wife has celiac (I'm learning that quite a lot of people do). I don't have that. Not sure what I have... but whatever it is, acts up once or twice a year. I'm trying the gluten-free to see if maybe I have a gluten sensitivity that builds up??? Whatever, but so far it hasn't been too difficult to follow. And when I cheat on occasion, it doesn't seem to bother me (so far).
