chicken pot pie... and cheese biscuits

OK, I resized this photo to 50% its normal size before posting it.  The problem  is that I cannot test it to see if it will get larger when clicked on until after I've published it.   This was a new recipe I found in a "Taste of the South's - South's Best Comfort Food".  The pot pie wasn't hard to do, but took a little time. The boys liked it, I found it a little wanting.  Next time I will cook my veggies longer and add more seasoning to the sauce.  But it didn't fall into the 'never again' category... just the 'needs fix'in' one. Since it's a basic chicken pot pie recipe, I'm not including the recipe, but let me know if you should want it.

But I am going to post the recipe for the best Cheese Biscuits I've ever made/tasted (again IMO):

2 cup (8oz shredded sharp cheddar cheese - or whatever cheese you like, I tend to use a Mexican 4 cheese combo that is made by Kraft and has Phil Cr Cheese in it)
1 cup butter (I use unsalted)
1 cup sour cream (best with regular, not low fat or non fat)
2 cups self-rising flour (if you don't have self-rising - and I don't- just use 2 cups all purpose flour and add 2 teaspoons baking powder and 1 teaspoon salt)

Preheat oven to 425. Mix all ingredients. Spoon into a mini-muffin pan a Tablespoon at a time. Bake for 10 mins until biscuits are golden.  Cool for 5 mins on wire rack. 

Depends on how much dough you use, but should make 24 - 36 small (pop in the mouth) biscuits.  I've also 'halved' the recipe and it came out great.




This is an old photo of grand daughter when she was 3 and taking home one of  the 5 kittens that one of our ferals left on our back porch.  The 3 black and whites that we have were part of that litter too. Now GD is 11 and Cocoa is 9 (as are his B&W siblings). They turned out to be the smartest and sweetest cats ever... (of course they are spoiled rotten).

    The pic of your Grand, when she was 3, is so precious. Know what I seem to notice, on little ones? The eyelids. Aren't they just the most fragile and beautiful things??????????? :-)

    1. I noticed that both photos enlarged, but I only re-sized the first one, so the 2nd probably was a bit big.

  2. The photos enlarge beautifully when you click on them, Rian, and are well worth seeing, especially the gorgeous one of your granddaughter with the kitten. If I can manage to translate your American cup measurements into pounds and ounces I'll have a go at your delicious sounding cheese biscuits.

    1. I'm sorry. I know there is a difference as my Aga cookbooks are in pounds, ounces, grams, etc. and I also have a devil of a time converting.

  3. Those pictures look perfect to me: when I click on them they enlarge just as they are supposed to. What a pretty little kitten, with a pretty little girl. So glad to know that little guy and his siblings are almost a decade old! :-)

  4. Spoiled rotten kitties are the best. My year old fella was a parking lot feral. My granddaughter gave me a wonderful tile that says Spoiled Cat Lives Here. He agrees. At least with the Lives Here part.

    1. We have several of those too. One says "a bunch of spoiled cats live here"... and another says "We are not spoiled, our owner is just well-trained".

  5. Your grand daughter's hair is a gorgeous color. I just love red hair and am always oohing and aahing over it but hers is a particularly lovely shade of red.

  6. Ok ....what is a chicken pot pie? ....I assume it is putting all the ingredients in a dish and toping it with a pastry. Over here we have two sorts of pies ....this sort, which has a pie funnel inserted in the middle ...and those that have tops and bottoms in pastry with a usually already cooked filling with no or thick sauce. The former method I find needs the veggies par cooked and takes several goes to get the seasoning right as you cant check it as it cooks. I would love your final recipe some time....and the biscuits sound yummy. Anything that only has a pastry bottom is usually called a Tart....It is amazing how different things are considering we speak the same language lol xx

    1. Well, Angie. It's a two crust pie... top and bottom. It did have a thick sauce, but I put the chicken, veggies, and sauce in and then topped it. Cooked the ingredients first (although I like my veggies softer, so will cook them longer next time). Then cooked the whole thing for another 30 - 40 mins.

      Generally we call them *pies* here whether they have one crust or two. But that means that although you don't have chocolate pies, you MUST have chocolate tarts?

  8. I was just thinking about a pot pie and here it is on your blog...now i know I need to eat one. I love the happy story and photo of your grand daughter and Cocoa. Two baby's growing up together :)
