Playing Catch-up...


African chicken peanut soup

Thought I'd try to play 'catch-up' a bit here. Made this soup last week, ate on it for 2-3 days and froze the rest. We really like it! Sent a pic of it to my cousin in New Orleans. She asked for the recipe and made it herself yesterday. 

Vic (one of my followers who doesn't have a blog - I think) mentioned in her comment that the cheese biscuits sounded good and was looking for some recipes. Here's the one I use... it's so simple and good thought maybe I ought to share:


Great Cheese Biscuits

Ingredients:

2 cups shredded cheddar cheese

1 cup melted butter

1 cup sour cream

2 cups self-rising flour (which I normally don't have... but can make by substituting 2 cups AP flour mixed with 2  teaspoons baking powder and 1 teaspoon salt)

Preheat oven to 425. Mix all ingredients. Then either spoon into well greased mini-muffin tin (makes 24 mini-muffins) or cut with biscuit cutter. Bake for 10 mins (till golden). Cool on wire rack for 5 mins.

I have also halved this recipe to make 12 mini-muffins for just the 3 of us.


There's not much to tell here as since my last eye surgery and the Arctic freeze we haven't gotten out much. 

Ferals doings fine. We have one raccoon that comes by every evening around 9pm... looking for a hand-out. He stands up on the Kitchen French doors and basically says "I'm here!" (sometimes he even bangs on it) We give him bread or cookies or whatever is on hand that day. One day he got a left-over cream puff... he was excited. I think raccoons have a sweet tooth... 

And we still have the 2 feral cats (the gray we call Shadow and the black we call Missy). They come by almost daily... and are usually waiting by the door in the morning. And if it's really cold, sometimes they will sleep under the heat lamps on the back porch. 

But we still get an occasional coyote in the yard... even though we had coyote rollers put on the back 6 ft fence. We think one comes in from our next door neighbor's retaining wall. He scares away easily, but it's still a concern for the ferals. 

However, it is mating season and our local newspaper says to be alert for seeing more feral activity (coyotes and bobcats). They recommend keeping a close eye on small pets when outside and not to call Animal Control unless an animal is acting sick or weird. Clapping your hands or banging a pot (we use an air-horn) will make them run away. 

And our crows have gotten quite comfortable... both in the front and in the back. They 'caw' whenever they see us and hang about the trees waiting for their peanuts or cheetos. Some are a bit greedy and try to get 2-3 peanuts or cheetoes in their beak at one time... occasionally one does it, most give up and take just one.




Our youngest son came by yesterday afternoon and said that the crows are all cawing and hanging about in the front when he came in. We said we know - they have gotten to know that we are OK with it.

OK, yes, I know I've jumped around a lot here... but that's just how my mind works. (Deal with it! - no, just kidding)

  1. Hi Rian! That African chicken peanut soup sounds very different and very tasty, I'd love to try that. I'm not a big biscuit person, but your cheese biscuit recipe sounded so good, now I'm tempted. I very much enjoyed reading about all the ferals, I could just see that raccoon with a cream puff! I sure hope your eye is still healing, and I did like that first poem. Always glad to see a new post from you. :^)

    1. My eye is still healing, Dug... may be a while yet before it stops tearing and being blurry. I do go see the eye doc in about 10 days. Will know more then.
      I'll try to get a pic of our dancing raccoon to post. He's pretty reliable showing up.
      I really like both those poems. But know that the first poem could NEVER take in someone like our present leader who IMO "isn't square with anyone" and is possibly 'evil' (in my eyes anyone who intentionally hurts people is evil).

  2. The chicken peanut soup sounds amazing, and those cheese biscuits. I’ll have to try that recipe; they sound irresistible. I laughed at your raccoon visitor banging on the French doors; he clearly knows how to ask politely. Shadow and Missy sound like such sweet ferals, and the crows are practically part of the family now. I love that you shared the poems too; both “Loyalty” and “Outwitted” are perfect reminders about friendship and inclusion. How do you decide which treats to give the raccoon each night?     1. Hi Melody! Thanks for stopping by. The wildlife around here has been part of our family for 40 years. They have shared our property and entertained us, our kids, and grandkids... and have never been a problem. As for what to give the raccoons... they like almost everything. They share the feral cat's food, love cookies, bread, etc. We don't make pets of them... don't get too close, etc. but they are welcome on the property. Once my eye is back to normal, I will certainly check out your blog.

  3. Your cheese biscuit recipe sounds good. I appreciate you giving the measurements for the baking powder and salt. I don't believe I've ever seen self-rising flour on the shelf at home.
    Hopefully the coyotes stay away and the ferals remain safe in your yard. Perhaps you can train the crows to protect them. :)

    1. Mae, the cheese biscuits are a fav of my grandson. And who knows... the crows do come around to the back too... they chase each other and the squirrels... maybe they would chase a coyote (like the Bluejays and Mockingbirds chase cats)

  4. with the weather being what it is, it is difficult to know what to write about and our thoughts do not often have a common thread. we read and write anyway. my posts are all over the place and i used to stick to a theme. the soup looks really good, we have been eating so much soup and one pot pasta dishes. the cheese biscuits sound like such a good idea, they would go great with chili too!!

    1. Debbie, our grandson made a pasta dish for us last night. And I took out the rest of the soup to have today. DH loves soup and will eat it almost every day for lunch. I tend to stick to crackers and cheese or apples and peanut butter for lunch. But I do like this African soup!

  5. Your cheese biscuits sound wonderful and I can't wait to try them. I have copied the recipe and put the grated cheese on my shopping list! I like soup that can be frozen. A pot of soup makes too many meals in a row for two people.
    I hope your eye is getting better and better. It has been a journey for you!

    1. Thanks, Miss Merry. And yes, you are right, a pot of soup makes a lot for 2-3 people. And my eye is healing gradually... it has been a longer journey that I expected. But apparently you are on your own unexpected journey these days. Take it slow and easy (if that's possible) and all will be well again.
