a trivial epiphany... and more

Ghost says hi!


I realized something this past weekend that isn't terribly epiphanic (is that a word?). One of the things that has come out of this 'shelter at home' order is that there is no rush to do anything.  I do like that as I've never been good at rushing.  Some people seem to thrive on it (people who work in Emergency clinics for example). 

When I was young, one of my uncles used to call me "Pokey" because I did things so slow (was always the last to get up from the table as I ate slowly, etc.) I still do. I hate rushing - for any reason.

But in life sometimes it is necessary. When I worked at Veterinary Hospitals (as an Animal Medical Tech - long story as to why I got my BS in Animal Science but never tried to get into Veterinary school - maybe another time.) - anyway, when I worked in these Animal Hospitals, I loved the work - but many of my colleagues chose to work the Emergency Clinics (not me - too fast moving - not my thing). 

So now when I go through my list of things to do for the day (and yes, I do make a daily list), if I didn't get to do one or two - it's like 'OK, just move it to tomorrow - no sweat'. We're certainly not going anywhere...

This may all seem a bit trivial... but to me it was like an epiphany.

A friend sent me this pic....  could be my daughter's house (if you add a horse or 2) - but for us, you'd have to exchange the dog and chickens for raccoons and possums.




Do you know what these are?  Japanese hot cakes! I saw them on Pinterest and had to try them.

I used a round thing I had for either pancakes or eggs...

They tasted good - not that different from regular pancakes just a bit fluffier.  I also didn't have any buttermilk so had to add some lemon juice to regular milk to make the buttermilk - so they had a slightly lemony flavor. We liked it and may add a little additional lemon the next time. If you'd like the recipe and don't have access to Pinterest, let me know and I will post it.

  1. Yes, this is a good season for me to learn to treasure and practice the art of relaxation. It is good for our body and soul to slow down from the usual modern hectic pace. That is a cute photo of the animals. Strange and dangerous times, I agree.

I'm working remotely, so while there's no rush to get to and from the office, I still have deadlines, virtual meetings, etc. I'm good with that; I struggle more on the weekends, with only myself and Derry in the house and not able to get out and do my usual things. I currently lack the motivation to tackle things that should be done, etc., etc.. However, I would like a little more balance in my life when things return to "normal," whatever that normal will be. The new normal. So, no epiphanies...yet!

  3. Usually I am quite self motivated but not lately. When we know there will be many days like this,it is tempting NOT to jump on every chore. I want to save some for when I get really antsy.

  4. No epiphanies thus far. Life is pretty normal as I tend to be a homebody. I do find it more difficult to go out as I feel some anxiety around other people.

    1. It’s so strange not being able to hug... I‘m a hugger, but hesitant these days even at home. With DH undergoing radiation and grandson still going out for grocery... it doesn’t seem like a good idea... but I miss it.

  5. I don't think Ghost is saying hi, I think she is saying "don't even think about taking my fish!"
    I have seen that recipe on Pinterest but have not tried Japanese pancake. I have not made any kind of pancake lately. SOmetimes I make French toast and I cook it in the waffle maker --lots of little pockets for the syrup.

    1. That’s probably true, Olga. But Ghost always has a mad face for the most part. And we make lost bread (French toast) a lot... but never in the waffle iron. May have to try that.

  6. I really don't know how I would get by if I didn't have my virtual family of bloggers. I love to hear how we are all getting through this time, and although I didn't know you were nicknamed "Pokey," I think I'd take it as a badge of honor. We are all moving at warp speed and this time has given me the chance to see what it's like to slow down. It's nice. :-)

    1. Only my Uncle Lester called me that... but it probably did fit. Another thing he said once that made me laugh was “I never knew you could talk until you went to college”... He was my dad’s brother and liked to joke around. And I agree that sharing this time in our lives with each of you is therapeutic... 🙃

  7. Staying home and taking care. Sounds much easier than it is to do. I am out of milk and dread going shopping. Tried online without success. Have a zoom meeting today and dreadingthe technology of it all!

  8. I've seen these pancakes online. And I think some talk show had a cooking segment on how to make them. I really like the idea of lemon added (lemon extract would work?) Kitty doesn't want anyone to touch her pink salmon (pun intended). And that photo ... cracked me up. They all musta heard the feed sack rattle & came running.

    1. Yes, probably late being fed. The animals know feeding time and if you're late, they congregate... waiting.
      As for the lemon extract, I don't know. I used fresh lemon which we always have for DH's sweet tea.

  9. Hi Rian, I am not pokey as you said you were but to tell you the truth I am not having one bit of trouble with this sheltering down thing. My kids worry about me being alone but I am having a blast.

  10. Actually, I can't tell much difference in the staying home part. We are such homebodies anyway. We've got to buy a few groceries tomorrow and pick up a prescription, but will try to be there when the store opens. I've made us both a mask and we will wear rubber gloves. It is such a worry, and very scary.
